The White Room

Elegant gastronomy in the heart of Amsterdam

Jacob Jan Boerma is one of the only 3 chefs currently has a triple Michelin stars restaurant in The Netherlands. Launched in 2016, The White Room by Jacob Jan Boerma in Amsterdam was one of the biggest restaurants openings of the year in the country and it reached Michelin 1 star status in 2017. Located inside the super luxury NL Collection, the Grand Hotel Krasnapolsky, right in the heart of Amsterdam. The first thing you would notice is the stunning interior of The White Room, with a harmony of white and gold colour in a classic royal French setting. The menu offering at The White Room fairly standard in the world of fine dining, aka al la carte and a tasting menu, but there is also an amazing value for money lunch menu at under 40 Euro per person.

I opted for the lunch menu with some a la carte in the mixed, judging by the canapes, I could already tell I was in for a treat. The mackerel worked like a treat with the refreshing taste of the cucumber, with the goat cheese added a fine balance of creamy texture. The north sea crab with watermelon was a killer combo; cool, sweet with a hint of earthiness, the taste was so fresh but yet packed with so many wonderful flavours, it was top notch. The main of low-temperature cooked cod was perfectly seasoned, moist with such a beautiful flaky texture, it had a creative hint of Asain element, using the spring onions and lemongrass, which lifted the taste of the fish to another level.

What can I say? The White Room's lunch experience was really special, the quality of the cooking was top notch and I think the cooking is close to reaching 2 Michelin stars level, and I won't be surprised if it becomes the next Amsterdam restaurant reaching that status in the near future. The presentation of the dishes was like artwork, just like the beautiful surrounding, but the most important element is the taste, fresh, light but blessed with a great depth of flavours. I would be more than happy to return to The White Room when I visit Amsterdam again!
