Contemporary Austrian cuisine

When looking for classic Austrian restaurants in Vienna, there are plenty of choices such as Puerstner and Figlmüller. However, it was somewhat a challenge to find a good quality modern Austrian restaurant without reaching the fine dining/Michelin star cost level. After some extended research, I discovered Buxbaum, a small contemporary restaurant located right in the heart of the city inside a residential square. Buxbaum is a cozy restaurant specializing in Austrian cuisine with a touch of international influences and modern European style presentation. Like many modern European restaurants these days, it offers a tasting menu, as well as the classic 3 courses a la carte option.

Pumpkin, sage, raviolo |
I managed to try many things from its menu as I dine with a big group. The mackerel starter had all the very expected garnishes combination, with fennel and citrus, it was very refreshing and would be perfect for summer. The main of steamed cod was carried on the summer theme, with dill and cucumber which made it a very soft and light dish, the caviar on top was almost like an umami bomb which really enhanced the taste of the cod. By far the strongest dish of the day was the Ötscherblick pork, it was one of the best pork dishes I have encountered this year. The meat was so tender with the perfect ratio of belly fat, the super thin crispy skin was also sensational, the finely seasoned white cabbages acted as the perfect contrast to the rich tasting pork, the dish was Michelin star level cooking without a doubt.
Cod, dill, cucumber, caviar |
Pork cheek and belly, cabbage |
Cream Brulee and blood orange |
Hot chocolate cake, milk and malt |
The service on the day was excellent, very caring and always treated us with great similes and not overly formal. To sum it up, Buxbaum served me some of the best tasting Austrian dishes from my trip to Austria. Very modern, clean with some beautiful presentations. Unlike most of the classic Austrian restaurants in the city, I found Buxbaum is a touch lighter, which is a welcoming change considering most of the traditional Austrian dishes are very heavy. This is a great restaurant if you want to sample top local food without needing paying crazy money for.
