Classic revisits

There are only a handful of Chinese restaurants I would keep on returning in London as it is such a large city with so many choices. It is hard to find top quality authentic Chinese restaurants but China Tang totally fits the bill. The hotel restaurant inside the 5 stars Dorchester Hotel has been around for more than a decade, but it is still going strong. Every evening, no matter if it is a Monday night or weekend, the restaurant is flooded with diners from around the world. The cooking by Chef Tong is based on classic Cantonese cuisine, but leverage top-grade local ingredients, such as Scottish wagyu beef and Cornish sole. Every season Head Chef Fong would add a few specials dishes on top of the standard al carte menu.

I ordered the razor clam from the chef's special menu, and it was steamed with soy sauce and garlic. The razor clam was fresh with a lovely tender texture, it was classic Cantonese seafood steaming at its best. The double cooked Iberico pork loin with tangerine peel and walnut was an innovative dish, it had a beautiful crispy surface while extremely moist on the inside, the sweet and sour taste from the tangerine sauce, together with the crunchiness of the walnut, made it such a special dish. The signature stir fry native lobster was cooked with spring onion and ginger, it was an impressive beast weighing 1.5kg. It had just a small hint of wok aroma, it was cooked to perfection with such mouthwatering umami and sweet taste.

I had another wonderful meal at China Tang, beside the classic Cantonese dishes which the restaurant is so great at, it was also good to see some creative dishes chef Tong has been developing. This is important as it made me want to go back for more. The sound of seared red mullet and braised wagyu beef short ribs in clay pot just sounds too good to miss out. The service was warming and the decor of China Tang is truly classy, no wonder why it is such a busy venue every evening.
