Great traditional Cantonese cuisine

China Tang at the Dorchester is my to go choice whenever I seek a traditional fine Cantonese experience. Headed up by head chef Fong, his menu is all about classic dishes that you would find in The Southern China region, using top-quality ingredients. With no gimmicks or no fancy presentations, China Tang has managed to create a group of loyal customers and it is able to pack out even a Monday evening. For my latest visit, I opted for a selection of seasonal dim sum and its classic from its a la carte menu.

New on the menu is a really well-crafted taro puff that is also filled with wagyu beef and topped with caviar. The beef filling was rich and savoury, with just a small hint of sweetness from the taro, it was dim sum done at such a refined level. The classic Peking duck was simply outstanding and tasted just like the version you would find in Hong Kong, the skin was charred into a dark caramelized colour, well marinated with a mixture of smoky and sweet umami taste. Another new dish on the menu is a chicken and truffle sizzling clay pot, the chicken was super tender with the earthiness of the black truffle and the mushrooms worked like a treat.

My first visit of the year, and my 15th visit overall, China Tang hasn't missed a beat. Still providing top-notch classic Cantonese cuisine and it was hard to fault. I really enjoyed the new seasonal dim sum dishes, and for me, China Tang does the best refined traditional Cantonese food, as close as what you can find in Hong Kong. Unlike many other restaurants in London, China Tang also managed to retain many experienced front-of-house staff so you will be for sure well looked after whenever you visit.
