Located inside the Dorchester hotel, China Tang is a Chinese restaurant with stunning decor to match. Created by the late Sir David Tang, the restaurant champion classic Chinese cuisine, along with a luxury cocktail bar. I was not overly impressive when I last visited a year ago, but the restaurant is always packed every night, not matter is a Monday or a Friday night, so it must be doing something right. One year later, I returned with a friend as he labeled China Tang as one of his favorite Chinese restaurant in London.

The meal kicked off with a winter winner, the eight treasures winter melon soup. The soup was packed with so many fine ingredients, from dry scallops, pork, shrimps to the sweet and soft tasting melon, full of clean but impactful taste. The showstopper dish of the day was the Australian abalone, slow cooked in oyster sauce and served with mushroom. It was so tender and tasted almost like a fine piece of steak, loaded with bags of savory and umami flavours. Last but not least was the slow braised pork belly, the meat was so moist and cut like butter, the clay pot cooking method added a touch fo wok and smoky taste, it was comfort Chinese cooking at its best.

My dinner at China Tang was a massive improvement vs my last visit. It was classic, traditional Cantonese cooking, but done in such a refined manner. I could taste the quality of the ingredients in all of the dishes, and while the price is high as expected inside a luxury hotel setting, the taste was just so comforting, it was proper Chinese food. Also, a big shout out to the service, very professional and well attended. If you are looking for modern or creative Chinese dining experience, China Tang would not be ideal for you, but if old-school top-notch Chinese food is what you are seeking, China Tang is the perfect fit.
