Cutting edge French cuisine
Duck Smoked with vanilla Orange and fresh curcuma |
It has been just over a year since I last visited La Dame de Pic, the 1 Michelin starred restaurant by the legendary French chef Anne-Sophie Pic, inside the Four Season Hotel at Ten Trinity Square, London. The creative fine dining restaurant is known for its elegant French cuisine and top class desserts, after trying most fine dining restaurants in London, it is fair to say La Dame de Pic has the best desserts offering. Another element I enjoy from the kitchen is daring to use a range of premium spirits in its cooking, from single malt whisky to well-aged rum, really taking advantage of the deep flavours you would get from a top-shelf bottle.
Cuttlefish, shiso, sea urchin, tagette |
Foie Gras Terrine, rum, pineapple, ginger and cardamom chutney |
Scottish scallop, smoked beetroot rose with grapefruit |
For my 3rd visit, I opted for the lunch menu. The cuttlefish was served like a tagliatelle, very smooth and finely seasoned. The shiso, as well as the sea urchin, offered a hint of wonderful freshness and peppery tone to the dish. The most enjoyable dish on the day was the smoked duck which had an element of orange and spices. The meat was cooked to perfection, very moist, while the orange, turmeric and vanilla tone delivered a whirlwind of satisfying taste, ranging from sweet, sour to spicy. The chestnut baba was a clever take on classic rum baba, the rum level was just right, and I really enjoyed the passion fruit element which added a lovely fruity and sour tone to offset the richness of the baba.
Cornish Brill, roasted cauliflower, Vietnamese coriander beurre blanc |
Tiramisu Coffee sponge and clementine confit |
Chestnut Baba Chestnut ice cream, bergamot chantilly Passion fruit coulis |
The White Millefeuille Tahitian vanilla cream, jasmine jelly |
I would say the lunch menu was pretty decent value for money, given the quality of the cooking, use of fine ingredients, as well as within such a luxury setting. There are plenty of other fine dining restaurants that would offer set lunch at a similar price but with a lower standard of cooking. I always shy away from going to a restaurant when the chef is in charge is not there (Anne Sophie Pic is based in her flagship restaurant back in France), but La Dame de Pic London is an exception. The cooking was creative and full of flair, which worked so well in the taste, head chef Luca Piscazzi has done a fine job indeed.
