Classy Chinese done just right

It is hard to believe I have been to park Chinois over 20 times. The fine dining restaurant in Mayfair does bold flavours of Chinese cuisine, mostly around Cantonese style to a really refined level, with a hint of creativity. Most of the dishes are based on traditional dishes and flavours profiles that you would find familiar if you are a fan of Chinese food, somehow Park Chinois finds a way to take it to a whole new level, leveraging top-level ingredients sourced from around the world. Below is my highlight from the recent 2 visits (21st and 22nd times).

The red shrimp done 2 ways in Chinese broccoli was something really special. The shrimps were as sweet as you can get, full of fresh umami taste. I also enjoyed the deep-fried crispy head as it tasted like prawn cracker but packed with so much shellfish taste. The stir fry shar-cha beef looked simple but the taste was sensational, the melting butter texture of the A5 wagyu beef was to be expected, and the sweet nutty taste of the sauce offered a great balance. Chinese dried sausages in potted rice are one of those classic dishes perfect for winter, and Park Chinois' version was done remarkably. The rice dish had a multilayer of lovely texture, it was also cooked with chicken oil so the aroma was really inviting.

Dinner at Park Chinois is always a special experience and it was great to see the restaurant still maintaining such a high level despite being such a large restaurant (as many as 200 covers per sitting). What set it apart vs other Chinese restaurants in London for me is its bold flavours without shying to source international ingredients if they feel it can create better results vs local ones. I got nothing but love for the place, and I am sure I will pop back there again soon in the near future.
