The perfect Cantonese BBQ

Grilled suckling Sevgovian pig in Cantonese style |
I have been in and out of China Tang London for the last 7 years as I am a fan of its really traditional Cantonese cooking, done in such an authentic yet classy way. The restaurant doesn't try to be clever or fusion with western concepts, it just does classic things really well using great ingredients. For a special birthday celebration, I pre-ordered a whole suckling pig, which required ordering in advance, and for good reason, as the restaurant would order a whole Spanish Iberico piglet imported from Spain especially to be roasted in the classic Cantonese BBQ style.

The whole pig weighed 6kg and it was served a little bit like Peking duck, with many mini bao buns served with hoisin sauce and spring onions. The pig skin was super crispy and the meat was outrageously tender, it was so tender with a mildly sweet and savory taste, it was easily the best suckling pig I have encountered in London, and not just in Chinese cuisine. To keep on the BBQ theme, chair siu pork was up next and that powerful sweet umami taste was just amazing, the pork again was of Iberico breed, the fattiness and lean meat ratio had a perfect balance, cooked to perfection and my only issue was the dish was too small!

The special dinner was really special indeed, this was my 17th visit and it was the finest to date yet. The food was done extremely well, and all in a really traditional Cantonese manner which is what this place is famous for. While the Peking duck at China Tang is the hero on the menu, other BBQ items I would rate it just as good, if not better, such as the char siu pork. In fact, the pig is on a whole new level, round up a few friends and pre-order this amazing thing, you won't regret it.
