Top-level Chinese fine dining in Hong Kong

Not to get mixed up with the China Tang in London inside the Dorchester hotel, China Tang Landmark is a fine dining Chinese restaurant located in the busy business hub in Central, Hong Kong. The interior of the venue really stands apart with its art deco design by Sir David Tang, China Tang Landmark is all about modern Chinese cooking, using the very best ingredients from around the world. Headed up by chef Albert Au, who is the youngest ever Chinese chef to gained 3 Michelin stars when he was at The Eighth restaurant in Macau. Albert now is the group executive chef for Chinese cuisine at Lai Sun Dining, a respected restaurant business with a selection of high-end restaurant brands such as the 3 starred 81⁄2 Otto e Mezzo Bombana and China Tang.

The house special dish was the steamed crab claw and it was truly sensational, first time ever I have witnessed such a giant crab claw, it was finely deshelled and the use of Chinese rice wine really uplifted the beautiful umami taste of the crab, with the egg white added a touch of lovely creamy texture. The wok-fried grouper with morels was outstanding, the fish was cooked perfectly with a lovely meaty texture, along with a stunning seafood aroma, I also really enjoyed the asparagus which added a nice balance of both crispness and sweetness to the overall dish. The main course is the classic Peking duck and it was done at such a refined level, the skin was so crispy and flavorsome, served 2 ways. The second serving of wok-fried duck in a lettuce wrap was really interesting with the use of garlic sauce, which added a hint of spiciness to the sweet tasting duck meat.

My dinner at China Tang Landmark was a game changer for me, for the first time, I experienced what really top-level Chinese fine dining is all about. Chef Albert's cooking has a lot of western elements but it has managed to retain the true Chinese cuisine essence at the same time, every dishes offered so many depths of flavours with some exciting elements such as the crab and suckling pig. The service was really outstanding too, everyone, from our waiter to sommelier was on their top game, which is not that usual in Hong Kong, even when you dine in a fine dining Chinese restaurant!
