Asian fusion, Scully style

Fusion food is hard to get it right, and it seems to be a dirty word to many chefs around the world. However, when a chef managed to get the balance right when executing fusion cooking, it can be some of the most exciting and impactful things. Located in St James, London, Scully is an Asian fusion restaurant by Ramael Scully, a chef that has traveled around the world and came up with a southeast Asian style fusion cuisine with inspirations from all over the world. From using the Europen dry-aging method, Asian pickling techniques to using South American ingredients.

One of the first dishes I tried was the tomato and coconut salad, very floral and light, I enjoyed the soft texture of the coconut, and the mild sweetness from both the tomatoes and green strawberries, very refreshing. I felt the dry-aged halibut was a little under-seasoned, but the garnishes were outstanding. The mixtures of the mustard-Seed potato, together with the coconut rempah and peanut, offered an exciting but unusual blend of sweet umami flavours. The main of crispy pork belly was sensational, cooked perfectly, super tender with a killer chili shrimp jam, colourful and fresh, with a sweet and spicy tone, well balanced the coolness of mint and fruitiness of the plum, it was simply wonderful.

My meal at Scully was a hell of an interesting, special experience. I have tasted things that were new and unusual, things that I didn't understand. Scully's style was so unique that I felt just labeling fusion itself was an understatement, it was so so refreshing in both concept and taste. I would say Scully is perfect for people who enjoy creative, out of the box thinking dining with a bit of edge to it. Oh, and you need to be able to take on some heat too as many of its dishes does contain a fair amount of spices.
