Cañabota (Seville)

Seafood temple

While Seville is flooded with top-notch tapas bars, I was sure there are many great modern, innovative restaurants that are just as good. Canabota is a modern seafood restaurant bar in the old town of the city. It is known for its fresh seafood counter where diners can check out what is available on the day before deciding what to order. White prawns, red shrimps, lobsters, red mullets, etc, the selection is big and I was spoiled with choices. Canabota is a popular restaurant and I had to book weeks in advance, with only 30 covers with a team of 6 chefs, the ratio of chefs vs dinners is high.

The best dish of the evening had to be the shellfish platter that contained shrimp tartar, red shrimp, langoustine and razor clams. It was a real explosion of seafood flavour, the shrimp tartar was heavenly, it was sweet and buttery rich. The langoustine was just as wonderful, it was moist with an elegant umami taste to it. Another strong dish is the stuffed squid, which was filled with Iberico shoulder and topped with a squid ink sauce, the multilayer of texture was really unusual, it had a mildly chewy texture of the squid, followed by some a meat ragu like texture from the pork, well seasoned and looked like a piece of modern art on the plate.

Canabota is truly a seafood temple, it leverages fresh, high-quality seafood and managed to create modern looking, great tasting dishes. The bar seating overlooking the kitchen ensure you can see the chefs at work up closed to see your order come to live, which is always nice to see. I enjoyed the cooking a lot, in fact, I feel the sheer quality of the cooking, combining with some modern cooking techniques warrant the restaurant a Michelin star. Canabota launched another casual tapas bar just next door serving small plates seafood and it would be the first on my to-visit list when I head back to the great city of Seville.
