I ended up trying 3 beef noodles joints on my Taipei trip and Niu Dien is my last stop, it is a fairly new restaurant with modern decor and design. The open kitchen is located at the front of the restaurant and diners can see how the chefs prep all the dishes. Niu Dien takes the beef very seriously and it uses a mixture of thick cuts of beef ribs and shin for its beef noodle dishes, which is very unusual vs the classic Taiwanese beef noodles. The classic version would normally use shin chopped in small pieces.

I order a plate of beef tripe before the noodles and I was glad I ordered it, it had a lovely chewy texture and cooked to the perfect level. The house special red braised noodle was served on a try, and diners can add the red braised sauce on to the clear beef broth to DIY the taste of the noodles. The soy, garlic, and tomato taste of the red braise sauce were top notch, as was the beef, it had a melting texture, so soft and rich in taste, it was simply sensational. The clear beef broth was not bad itself either, it was light and yet load with so much natural sweetness thanks to the long hours cooking containing beef bones and marrows.

Niu Dien has somehow taken the humble beef noodles to another level, largely thanks to the use of more premium cut of beef and the long hours cooking of the broth. I would rate it as the best beef noodles joint out if compared to Yongkang and Liu Shandong. It was a touch more refine and also the setting of the restaurant is far better, more clean and tidy.
