For traditional fine Cantonese cuisine in London, China Tang inside the Dorchester Hotel has long been my go to venue. Head chef Fong is the star and the masterchef behind the show, the dishes focus on very traditional Cantonese cuisine but use top-class British ingredients. I have had many wonderful special occasions here and no 1 single time China Tang has failed to impress. For my 20th visit, I went for a dim sum, sharing party style.

The house special wagyu beef taro puff was as good as I recalled. The pastry filling of beef and taro ratio was perfect, creamy, buttery and peppery with a soft earthy tone. The topping of n25 caviar acted as a magical umami seasoning and it was top-notch. The traditional beef brisket stew was really special and so comforting, the yellow bean braising sauce was blended expertly and the temperature was just right, the beef had a melting texture. Another dish that punched above the level for me was the Iberico char siu e-fun egg noodles, stir fry with a lovely depth of wok aroma, with the seasoned soy sauce offering such a comforting umami taste.

As expected, the dim sum occasion at China Tang was spectacular, you would find the quality as good, if not better than many high-end places back in Hong Kong. In the evening, this place can be super crowded and can do as many as 200 covers even on a Monday night. However, recently, I started to enjoy visiting for lunchtime when it is not overly busy. So this is actually a great spot for a family day out or you want a more relaxing time with friends while seeking quality dim sum, handy on the weekends when Chinatown is loaded with tourists.
