Launched back in September 2022, Alex Dilling was already outstanding when I visited when it just opened. Of course, it is easier when he already operated at such a high level back in the Greenhouse days with 2 Michelin stars under his belt. His first solo project inside Cafe Royal hotel is for sure a big deal for any serious foodies. What really makes Alex cooking stands out is his highly technical skills and imagination, when combined with the finest ingredients, you will get something really special.

For my 3rd visit, I opted for its tasting menu as usual. The quail was cooked in a pig bladder with trompette mushrooms, which created a bold inviting earthy aroma, the quail itself was super tender, seasoned, and cooked to perfection. For the main event, I opted for a special house-roasted chicken. It wasn't just any standard chicken of course, with a Dillng makeover to turn into something truly special. The chicken was stuffed with foie gras and girolles, it was super moist and as good as a roasted chicken can be really. The second serving came with a confit leg topped with black truffle, to add an extra touch of class. I had the hazelnut dessert before and it was one of those I wouldn't mind having over and over again, the vanilla and hazelnut combination was such a delight, it was like a pimped-up white chocolate Ferrero Rocher.

After a few months, the food offering has been even more refined, this is an amazing progression as this restaurant is not even 4 months old yet as of writing. Alex Dilling is the launch of the year in western fine dining for me in 2022, it is at such a remarkable level. I would rate the quality of the cooking similar to other 2 Michelin stars level venues in London. In fact, I think is better than most other 2 stars on the list already. Come 2023, for sure it will gain star status without a doubt, as the food offering is already some of the finest in London.
