Tang Court, located inside The Langham hotel in Hong Kong with 3 Michelin stars, pays homage to traditional Cantonese cuisine. As you expected from a luxury hotel, the dining room itself is understated: polished wood, soft lighting, and a layout that feels private even when the place is full. Here, classic Cantonese cooking is not reinterpreted or deconstructed; it’s respected, elevated, and delivered with technical perfection. The real brilliance of Tang Court lies in how it handles luxury ingredients. Instead of overwhelming them with showy techniques, the kitchen amplifies what’s already there.

A great example is the native lobster noodles, the lobster was cooked just right and blended the flavour into the noodles with harmony, the dish felt like it was designed to showcase every possible nuance of the crustacean. It doesn't look like anything special, and you can easily find similar-looking dishes elsewhere, but Tang Court has done the classic in a really high-standard way. I found the house special crispy-skin chicken — deceptively simple, but executed with such precision that the contrast between the glassy skin and the succulent meat was. This was a take on Peking duck, and the end result is just as rewarding. The one thing I wasn't overly keen on was the baked crab shell, I found it was strange to add cream with you are using really fresh crab, which overtook the sweetness and freshness.

I found Tang Court does the traditional things really well. There’s no gimmicky presentations — just deep respect for the ingredients and for the traditions they come from. It’s rare to find a restaurant that feels so secure in its identity. What I found is that when it tries to do something more creative, it just doesn't have the same impact. I always find the Hong Kong Michelin guide can be very misleading, and this is the case with Tang Court. I would expect 3 stars would mean perfection in everything, but for me, Tang Court is a place that does classic Cantonese really well, but not much beyond that.
