Tin Lung Heen

Tin Lung Heen, perched on the 102nd floor of The Ritz-Carlton in Hong Kong, commands attention before a single dish even reaches the table. The panoramic view is a spectacle — Victoria Harbour sprawling beneath, the city’s skyline cutting sharp lines against the sky. Of course, the real focus should be on the food as it must be pretty special too, when Tin Lung Heen itself has 2 Michelin stars. Sky high fine dining can be pricy, and that is the case with Tin Liun Heen, with costs that could be as high as  £200 per person after service and wine, so I opted for the more affordable lunch set menu to test the water.

The dim sum, often a safe but uninspired bet at lesser places, is an event in itself here. My fish maw dim sum was steamed just right, very smooth in texture, and the addition of crab roe added a touch of richness and umami depth. I enjoyed the salted egg prawn:  Crispy, creamy, and deeply umami, with a balance of sweetness and saltiness that lingers. It’s indulgent yet comforting at the same time. The char siu pork was also solid; it had a slightly charred, glossy exterior with a savory-sweet taste and a moist, juicy interior.

Service at Tin Lung Heen is another layer of precision. The staff moves with quiet authority, fluent in the language of fine dining without the stiffness that often kills the mood at top-end Chinese restaurants. They read the room well. There’s no pushiness and no hard sell on the wine pairings, which is refreshing, as I am not a big wine drinker, so wine pairing is never something I would go for. What  I like about Tin Lung Heen, apart from the amazing view, though, is its restraint. Many high-rise, high-price restaurants lean into gimmicks with dry ice theatrics and over-styled plating; none of these appeared here, just very good Cantonese food with service and decor to match.
