China Tang, the Chinese fine dining restaurant inside the 5 stars Dorchester Hotel is one of the top destination restaurants for wealthy travelers from around the world. Located inside the basement of the hotel, this iconic Chinese restaurant was created by the late Sir David Tang, featuring a stunning art deco inspired cocktail bar and dining room. The menu is mostly classic Cantonese dishes, along with some modern dishes created by chef Fong, the head chef who has been at China Tang for over 7 years. This is an extremely popular restaurant, and can even be packed out on a Monday night, so booking is recommended.

For my latest visit, I opted for a selection of dishes from the a la carte menu. The classic Peking duck was sensational. The duck was sliced in front of the guests, with the waiter masterfully craved up the beautiful crispy skin and meat. The sweet and smoky duck skin was heavenly, the China Tang's version fo the Peking duck was top notch. The best dish of the evening was the slow-cooked wagyu beef short ribs, it had a melting texture with a lovely crispy edge, thanks to the deep fried element at the last moment. The classic Cantonese dish: Tofu with minced chicken and salted fish was a comforting winter dish. Cooked in a clay pot, the tofu was silky smooth and the salted fish acted as the perfect seasoning to offer an extra edge of richness to the whole pot.

My dinner at China Tang was a really enjoyable evening. The cooking was mostly traditional Cantonese but done in a fine manner. While the presentation of the dishes was fairly similar to what you would see in many other Chinese restaurants in China Town, the taste was on another level, thanks to the high-level skill from the kitchen and the use of premium ingredients. On top of that, the service is slick, just as you would hope for when dining inside one of the finest hotels in the world. China Tang offers classic Cantonese cuisine at a refined level in a stunning art deco setting, it is ideal for those who enjoy traditional Chinese food without any gimmicks.
