The first course was a combination of luxury ingredients with Japanese fatty tuna, foie and caviar, seasoned with soy sauce. It was very good indeed with every ingredient working well together, very rich and creamy. The turbot dish was the best dish for me, came from a 9kg fish and it was super moist. The side of the courgette flower stuffed with lobster and scallops added so much rich umami depth to turn this dish into a seafood heaven. Another strong offering was something I had before from my first dish, the chicken dish with girolle mushrooms, perhaps the poshest chicken and mushrooms dish in London. The chicken was so tender and the earthiness of the mushrooms and sweetness of the shellfish sauce created a wonderful balance, not to mention the side of langoustine added an extra layer of freshness.
