Hannah

A Slice of Kyoto in Waterloo

Hassun

There have been many high-end Japanese openings recently, but Hannah Japanese Restaurant offers an exquisite Omakase dining experience, blending traditional Japanese Kaiseki with modern innovation. Situated at County Hall, its tranquil ambiance mirrors its culinary philosophy—celebrating seasonal ingredients and the artistry of food presentation. The menu in true Kaiseki form, comes in 11 courses, with a real focus on seafood, as well as dashi stock to create a one-of-a-kind fine dining experience.

Tilefish and caviar

Seabream and dashi

Turbot in chicken and clam sauce

Tuna tartare

Iberico pork ramen

I found the main courses were especially outstanding, the grilled Scottish lobster was highly charred and served in a bed of butter that was cooked with the lobster head and legs, to uplift the umami level, sea urchin was added, before topping up with some lovely Alba white truffle which delivered an inviting milky aroma. The A5 wagyu sukiyaki was just as enjoyable, the meat had a melting buttery texture as expected, and that black truffle and beef mallow sauce was some of the most incredible sauces I have eaten this year. I was really amazed that a restaurant with such a small team could produce some top-level Michelin-worthy dishes.

Lobster,sea urchin and white truffle

Grilled A5 wagyu and black truffle

Crab, eel and roe rice with miso soup

Japanese tea ice cream

Wagashi

Hannah used some of the finest ingredients from Europe and beyond, so despite a price mark similar to a two-star restaurant, I found it reasonable. The intimate restaurant accommodates a limited number of guests to ensure a bespoke dining experience. It was Japanese fine dining at the highest level as far as London standards-wise. For those who are seasoned Kaiseki enthusiasts, Hannah promises an unforgettable journey into the art of Japanese cuisine.
