Hotel fine dining done right

Brooklands by Claude Bosi feels like a restaurant designed to prove a point — that luxury doesn’t have to mean predictable. Tucked into the top floor of the Peninsula London, it trades on grandeur but keeps a lightness of touch. The space is sleek and modern, with subtle nods to British engineering heritage, but it wisely avoids falling into themed gimmickry. Bosi’s stamp is everywhere: inventive, unforced, and grounded in deep technique. He’s known for pushing boundaries, but here he focuses that energy into refinement rather than theatrics.

Bosi weaves together British produce with French discipline, landing dishes that are both familiar and exciting without feeling contrived. The cod fish was a perfect example, cooked to the tightest margin of perfection using turnip and parsley, it carries a sabayon sauce so rich and exacting it feels engineered rather than cooked — yet it never overwhelms, simple things put together with a perfect result. The Brittany pigeon was another world-class dish, a hint of smoky note, packed with bold earthly tones with a sweet aftertaste, with the saline pop of juniper element lifting the whole thing to another level.

This is my second visit, and I found it exceeded my first, as I found the cooking cleaner and direct, while improving on taste. For those looking for an experience that goes beyond the checklist of fine dining tropes — white tablecloths, tasting menus, panoramic views — Brooklands delivers something more honest. It’s luxury without pretension, technique without showboating, and above all, hospitality that feels human. In a city crowded with big names and louder venues, Claude Bosi has carved out a space that feels both elevated and grounded — a rare, rewarding thing.
