BiBo Dani García Madrid

International flavours in Madrid

Dani Garcia is now such a well-known chef in Spain, with more than 20 restaurants in Spain, and he launched a limited edition burger with Mcdonald's, he appears to be the Gordan Ramsay of Spain. Bibo is his 'international' concept, where he combined world flavours and injected them with local Spanish ingredients. Dani actually launched Bibo back in London and I have dined there before, but judging from the menu, it is hardly the same as there isn't hardly any overlap on the menu. The Madrid site has much wider choices, as well as a much more impressive dining room.

Most dishes are bigger enough to share for 2, and that's what I opted for. My first course of tableside-served Cesar salad was fun and it was a really top-notch salad indeed. The dressing was made fresh in front of us and the sharp sour umami taste from the anchovies was a nice touch. Snow crab tagliatelle had a creamy dressing, and I found it unusual with the use of sweet sherry wine in the sauce to add a nice balance to the rich taste, very enjoyable. The main course of grilled Iberico pork pluma was sensational, cooked medium with a lovely sweet umami taste. It had a buttery melting texture and as far as pork dish goes, you can't get better than that.

My Bibo Madrid experience was nothing like what I have had in London, it was easily an upgrade. The food was done really well and the food price was great value for money. The dish sizes are also much bigger than London's site! It is just a better restaurant in every way. Put that aside, Bibo was a great restaurant that offer a touch of creativity and fusion elements and managed to do it well. A great venue for those who are after something modern and usual.
