Gaytan in Madrid has the kind of hipster feel written all about it. Located in the northern part of Madrid in a residential zone. Hidden within a crowd of old flats with hardly any branding at the front. However, once you step inside, you look at one of the edgiest restaurants with a well-designed space. All the tables are surrounding the open kitchen, where the chefs become the central point of the restaurant, this goes beyond the trendy kitchen counter concept and takes it to another level. Gaytan offers ALC lunch time and a tasting menu in the evening.

The tasting menu kicked off with a selection of canapes which was displayed under a tree model, which itself has a Fat Duck feel to it. The rhubarb kombucha that was served on the side was really outstanding and tasted so fresh and clean, which also acted like a plate freshener for the following dishes. I never knew John Dory and chestnut would work together but somehow Gaytan pulled it off wonderfully, the meaty texture of the fish worked really well with the buttery creamy taste of the chestnut. The main course of suckling pig was a total winner too. Seasoned to perfection with crunchy crackling, the saffron and garlic aroma was also extremely inviting.

Gaytán was a fun dining experience, the cooking was creative but not overly gimmicky, I enjoyed the tasting menu as a whole, all the dishes had a good balance of taste, and all looked really beautiful. It was a solid 1-star restaurant for sure. What makes this place super cool is without a doubt the open kitchen and table arrangement, this is a great restaurant for any serious foodies.
