Saddle in Madrid position itself as a classic contemporary fine-dining restaurant, with a high degree of respect for traditional cooking concepts, with a touch of modern elements in the mix. Classic is a classic for a reason, the reason it lasts so long is down to the sheer popularity and taste. Looking at Saddle's menu, it does has a feel of a traditional vibe with its food offering, with dishes such as buttered dove sole and steak tartare served tableside. I like what I see as when classic dishes are done well, it is hard to beat.

My fish course of wild grouper with an olive sauce was simple visually but blessed with a powerful taste. The fish was cooked just right, very soft, and the sweetness of the parsnip added a touch of freshness to the overall finish. The main roasted pigeon was pure class, finely seasoned with a really moist tender, the gammy taste was just right, not overly rich and the soft smoky, and preppy tone really enhanced the taste brilliantly. It was perfection and could see it served inside a 3 stars restaurant in London for me. |

Saddle delivered a masterclass of taking classic dishes to a really refined level. Most dishes are simply a piece of meat or fish with some garnishes on the side, but all elements were well executed. I also got to give credit to the service team as they were really outstanding, totally felt like we were treated like VIPs despite I am being nobody. Saddle is truly a great restaurant that ticks so many boxes.
