I have always been a massive fan of BBQ cooking, when things are cooked over an open fire, the charred and smoky flavours, work wonders no matter if it is vegetables, meat, or seafood. Launched in 2023, Humo has taken the fire cooking concept to another level. The open kitchen has a bespoke wood fire device, and its cuisine takes inspiration from Japan, with an injection of international flavours, from South America to Europe. I was lucky enough to secure a counter dining space, watching chefs at work with the impressive open-fire griller.


Mushrooms 3 ways, yolk

Yorkshire pearl barley, fermented amarilla plum, peas, Cornish brown crab

Prawns, beef fat, nori flatbread, mushrooms

Hand-dived Orkney scallop, roe, nectarine, whisky barrel, Speyside sabayon, kinome


The hand-dived Scottish scallop was one of those dishes that won't look out of place in a traditional fine-dining French restaurant. The charred scallop edge had a hint of smoky aroma thanks to the chopped whisky barrel wood that was used for the grilling, and the sabayon cream added a lovely creamy touch. The star of the night without a doubt was the grilled monkfish, cooked and seasoned to perfection while looking so beautiful. The sweet green pepper and almond sauce offered a sweet nutty profile, which worked in harmony with the boldness of the fish.

Humo was a very refreshing dining experience, while fire cooking is nothing new, Humo has given such a unique treatment that I can't think of anyone else doing anything similar. What impressed me the most was that their concept was able to deliver high-level results in both taste and visual. Which got me thinking about when I should head back again to try out other dishes on the menu. Humo is just the kind of smart counter dining restaurant that I always have time for.
