Located in Barbican, Restaurant St Barts is a newish restaurant that has taken British ingredients seriously to a whole new level. The restaurant would only use seasonal British ingredients and refuse to use anything else beyond. The concept is a long tasting menu of around 15 courses, with each course focusing on a hero British ingredient to champion. With less than 6 months since opened, the restaurant landed a Michelin star in March 2023.

The meal kicked off in the bar zone with canapes, before you would taken to the main dining room for bigger plates. I enjoyed the lobster bun a lot, it had a bold shellfish taste with the hot buttery spices glaze worked really with the sweetness of the lobster. The cuttlefish noodles, some really thinly sliced Cornish cuttlefish that are shaped like noodles, it was finely marinated with a soft yet bouncy texture. There was one dish I did not enjoy which was the duck, which had a gamy and earthy taste to a level that I found was too much for me.

As a concept, I really like St Barts, Championing the best that Britain can offer is nothing new, but they have done it in a very simple yet elegant way, with quality service, and sophisticated decor to match. Yes, there was one course that was underwhelming, but that is to be expected in a long-tasting menu. Beyond the duck, I totally get it and feel it deserves its Michelin star status. It is still a very young restaurant so I am sure it would only improve going forward.
